A study concludes that the daily consumption of boiled beans can control glucose levels and blood lipids.

The research, which was carried out for 10 years by members of the Autonomous University of Querétaro (UAQ) and the National Institute of Forest, Agricultural and Livestock Research (INIFAP), was carried out with experimental rats.

"Various research has allowed us to conclude that there is a decrease in glucose levels of experimental rats, former diabetic professor, fed with a diet added with cooked beans of some Mexican varieties," said Dr. Rosalía Reynoso Camacho, a research professor at the Faculty of the Faculty ofChemistry of the UAQ, in an interview with Conacyt.

The development of these studies had the joint support of the National Council of Science and Technology (CONACYT) and INIFAP, through the Sagarpa-Concyt Sector Fund, the specialist said.

To evaluate the insulin resistance of the rats studied, the researchers calculated the concentration of glucose and insulin on the fasting of rodents, through the calculation of the homeostatic model of insulin resistance evaluation, known as Homa (acronym in English in Englishof homeostasis model assessment).

“The results of these studies showed that healthy animals presented 4.3 homa values, while an Obesa rat presented a value of 14.6.However, by consuming beans from the Flor de June variety, the insulin resistance of obese rats was reduced to six, ”explained the researcher.

In addition, additional studies demonstrated that when rats consumed a high fat and fructose diet to induce them to obesity, they increased their body weight 15 percent with respect to others fed with a healthy diet.

However, other rats fed with a hypercaloric diet, but with the inclusion in their 10 percent cooked bean regime of the June type Dalia, they had a weight gain of only seven percent.

Another of the research projects included adult women in the rural area of the state of Querétaro, where results reveal that there is an association between the bean consumption of these women and a lower risk of cardiovascular diseases, due to the effects in terms of levelsof cholesterol and triglycerides.

The doctor explained that given the high consumption of soft drinks among the population of women studied, the bean did not counteract the high levels of industrialized drinks sugar or other unhealthy foods.

Other investigations show that both in animals and humans were detected that beans, depending on its variety, decrease glucose levels, between 20 and 40 percent, as well as oxidative stress associated with diabetes complications.
