Hazelnut cream

For 4 people, 120 calories and sporadic consumption is advised.

8 egg yolks
4 teaspoons of honey
70 gr.of starch or cornstarch
100 gr.of roasted hazelnuts
1/2 liter of milk
Ground cinnamon

The hazelnut is used very minced, so, if necessary, we will pass it through the mortar.
The yolks with honey and starch or cornstarch are beaten until a homogeneous cream is obtained.
Then, hazelnuts and milk are added.It is heated over low heat, stirring incessantly with a wooden spoon.
When it has thickened enough, it cools in the fridge for a couple of hours.It is served in glasses and sprinkles with cinnamon.
