Well, I'm new to diabetes in me, but my mother was diabetic and my sister is, and I have cooked many things for diabetics.For example, truffles to rum.

Chocolate of more than 70% cocoa (it does not carry added sugar).I buy it in Mercadona.Lo Fundes, 1 tablet, and add Light liquid cream.A splash of rum, and let it rest.If it is not thick enough you throw a cornstick.Then ballites are made and battered in more grated chocolate (you reserve at the beginning, of the tablet).
