According to a study by the University of Alabama in Birmingham, following a low carbohydrate diet can improve the function of our beta cells, which are responsible for producing insulin.

In the study, 57 adults participated with type 2 diabetes, divided into two groups: one with a low carbohydrate diet and another with a high diet in carbohydrates.The results showed that those with the low carbohydrate diet experienced significant improvements in the response of their beta cells, much more than those of the group with high diet in carbohydrates.
