@tamara4 I believe that what you are looking for does not exist, as commented @ruthbia foods have hydrates, fats and proteins, by far the hydrates are the ones that upload the glucose most and quickly, but fat and proteins do so (with moretime), so they are foods that the body assimilates in part as glucose.
The secret is not to find food with 0 glucose, the secret is that it compensates for glucose intake, either like hydrates, fats or proteins, with the corresponding medication to lower glucose, if you are type 2, the typical is metformin, etc.... if you are type 1 with insulin.
Think that this is the natural behavior of the body, compensates and maintains the level of glucose by releasing insulin naturally.
Do not waste your time looking for a "magical" food with 0 of everything, that I already tell you that it does not exist, it is better to look for how to compensate for what you eat to maintain the level of glucose.

As you have told you, except water, everything rises glycemia, more or less, slower or faster, with more or less difficulty that it goes down later ... but everything goes up.
How can you have to be calculating doses, grams of HC thoroughly?Having low hydrates diet.By eating few hydrates, you have to get little fast, it is the law of small numbers, if there are few hydrates, little fast insulin and much less margin of error for both hypo and hyper.It is the only way that I see what you say, and with a lot of practices and knowing what goes up more or less.
